VEGGIE BURGER WRAPS

One of my favorite meals for lunch is a veggie burger wrap.  This is a double dose of veggies that can be made fairly quickly and is filling.

Use your favorite tortilla and top with a spread first:

Mustard, hummus, vegan mayo, avocado - whatever you enjoy!

I chose avocado. A ripe avocado will spread easily and you can top it with red pepper flakes for an extra kick!

Then add your favorite veggies, or just add pre-cut salad greens.

then layer on:

  • baby spinach

  • bell pepper slices

  • mushrooms

  • pickles

Then I put a Dr. Praeger's Mushroom Risotto burger in the air fryer for 6 mins at 400 degrees. When it was done, I added it to the veggies.

Then fold the bottom up, and fold the right and left sides in and eat it like a wrap, open on one end.  You can also fold opposite sides in, and then the other sides and roll it like a burrito.

This delicious meal comes in around 400 calories and will keep you full for hours. 

To change this recipe up often, use different veggies and rotate in different veggie burgers, lentil burgers or bean burgers.  You could also swap tofu or tempeh for the burger.
